My Mum's banana bread is iconic in my family - and hers is a no-fail recipe for moist, banana-y flavour. Mystified by my stashing brown bananas in the freezer for the last two months, my fiancee now knows the glory that is the following recipe:
Dawn's Infamous Banana Bread
Preheat oven to 325 F
1. in one bowl mix:
1/4 c. veggie oil or butter
3/4 c. brown or white sugar
1 egg
1/2 tsp. vanilla extract
2. in another bowl mix:
1 1/2 c. whole wheat or unbleached flour
1/2 tsp. salt
1 tsp baking soda
1/2 cup walnuts or sunflower seeds
3. mix wet ingredients into dry ingredients bowl, adding 3 mashed very ripe bananas until just mixed.
4. pour mix into greased loaf pan or 12 muffin cups, and bake 40-50 minutes until golden. eat.
