One of my goals, to bake an awesome loaf of bread, can be ticked off my Upcoming Projects list. Organic whole wheat bread from
the best bread recipe I've come across yet. For those of you who are "into" bread, you may appreciate this discovery: it's all about paying attention to your ingredients and being aware of what the bread needs (if it's too dry, too wet, to crumbly etc...) to make it right. To be present to the task. And I
love kneading it by hand. As Ed Brown says in his poem in
The Complete Tassajara Cookbook, "Cooking is not a mystery...The mystery is that it is possible to do what we don't know how to do."
